
Medu vada (also spelled as “medhu vadai”) is a popular South Indian snack made with urad dal. Here’s a recipe for medu vada:
Ingredients:
- 1 cup urad dal (split black gram)
- 1-2 green chilies, finely chopped
- 1 inch ginger, grated
- A pinch of asafoetida (hing)
- Salt to taste
- Oil for deep frying
Instructions:
- Rinse the urad dal in water and soak it in water for about 4-6 hours. Drain the water and grind the dal into a smooth paste, adding a little water at a time as needed. The paste should be thick and fluffy.
- Add the chopped green chilies, grated ginger, asafoetida, and salt to the dal paste. Mix well.
- Heat oil in a deep frying pan on medium heat.
- Wet your hands with water and take a small ball of the dal mixture. Flatten it slightly to give it a doughnut shape with a hole in the center. Alternatively, you can use a wet spoon to drop the mixture in the hot oil.
- Carefully drop the vada into the hot oil and fry until golden brown on both sides.
- Remove the vada from the oil with a slotted spoon and place it on a paper towel to absorb any excess oil.
- Serve the vada hot with coconut chutney or sambar.
