
Bombay sandwich, also known as Mumbai sandwich, is a popular street food snack in Mumbai (formerly known as Bombay), India. It is a vegetarian sandwich made with sliced vegetables, chutney, and cheese, served on toasted bread.
Here is a simple recipe for Bombay sandwich:
Ingredients:
- 8 slices of bread
- 1 small cucumber, thinly sliced
- 1 small tomato, thinly sliced
- 1 small onion, thinly sliced
- 1 small boiled potato, thinly sliced
- 1 small beetroot, thinly sliced (optional)
- 1 small carrot, thinly sliced (optional)
- 1/2 cup grated cheese
- Butter or ghee, for toasting the bread
For green chutney:
- 1 cup fresh coriander leaves
- 1/2 cup fresh mint leaves
- 1-2 green chillies
- 1 small piece of ginger
- Salt to taste
- Water as needed
For red chutney:
- 1 cup chopped tomatoes
- 2-3 garlic cloves
- 1/2 inch piece of ginger
- 1-2 red chillies
- Salt to taste
Instructions:
- To make green chutney, blend together coriander leaves, mint leaves, green chillies, ginger, salt, and water in a blender until smooth.
- To make red chutney, blend together chopped tomatoes, garlic, ginger, red chillies, salt, and a little water in a blender until smooth.
- Take 4 slices of bread and spread green chutney on one side of each slice. Take the remaining 4 slices and spread red chutney on one side of each slice.
- Place sliced cucumber, tomato, onion, potato, beetroot, and carrot on top of the chutney on each slice of bread.
- Sprinkle grated cheese on top of the vegetables.
- Place the slices with green chutney on top of the slices with red chutney, making four sandwiches.
- Spread butter or ghee on the outside of each sandwich.
- Heat a pan or sandwich maker over medium heat. Place the sandwiches in the pan and cook for 2-3 minutes on each side, or until the bread turns golden brown and the cheese melts.
- Cut the sandwiches into halves or quarters and serve hot with extra chutney on the side.
