
Frankie is a popular street food snack in India that originated in Mumbai. It is a type of wrap made with a soft, thin flatbread called a “roti” or “chapati”, which is filled with various spicy, tangy, and flavorful ingredients, such as potatoes, onions, tomatoes, capsicum (bell peppers), paneer (Indian cottage cheese), and various spices. The wrap is then rolled up tightly and cut into smaller pieces for serving. Frankie can be made with different fillings, including vegetarian and non-vegetarian options, and it is often served with chutneys or sauces for added flavor.
Here’s a recipe for a delicious Veg Frankie that you can try:
Ingredients:
- 4 chapatis or tortillas
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 1 large capsicum, finely chopped
- 1/2 cup boiled and mashed potatoes
- 1/2 cup boiled green peas
- 2-3 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp oil
- 2 tbsp coriander leaves, finely chopped
- Tomato ketchup or mint chutney
Instructions:
- Heat the oil in a pan and add the cumin seeds. Once they start to sizzle, add the ginger-garlic paste and green chilies. Sauté for a few seconds.
- Add the onions and sauté until they turn translucent.
- Add the tomatoes and capsicum and sauté for a few minutes until they soften.
- Add the boiled and mashed potatoes and boiled green peas. Mix well.
- Add all the dry spices – coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well and cook for a few minutes.
- Add the chopped coriander leaves and mix well.
- Take a chapati or tortilla and spread some tomato ketchup or mint chutney on it.
- Spoon some of the vegetable filling in the center of the chapati.
- Roll the chapati tightly and wrap it in a foil or paper.
- Repeat the process with the remaining chapatis/tortillas.
- Serve hot and enjoy your delicious Veg Frankie.
