Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1 cup mango puree
  • Fresh mango slices, for garnish (optional)

Instructions:

  1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix well and press the mixture into the bottom of the prepared pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add in the 1 cup of granulated sugar and cornstarch, and mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, heavy cream, and vanilla extract, mixing until smooth.
  5. Pour the mixture over the crust and smooth out the top.
  6. Spoon the mango puree over the top of the cheesecake and use a knife to swirl it into the cheesecake mixture.
  7. Bake the cheesecake for 50-55 minutes, or until the edges are set and the center is slightly jiggly.
  8. Remove the cheesecake from the oven and allow it to cool to room temperature.
  9. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
